Deli Style Chicken Liver Pate Old Fashioned Spread Appetizer

When I was younger, my Mom always made homemade Chicken Liver Pate Spread for the Holidays. It's relatively easy to make, and duplicates the smooth taste and texture that you would find in authentic New-York style delicatessens.

Served with crackers or placed in a bread bowl, this tasty appetizer is sure to be a huge hit at your next Pot Luck Supper, Buffet or Tailgate party. Try making this Chicken Liver Pate when you say "I'll bring a little something" to the next party!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 (lb.) chicken livers
  • onion salt, to taste
  • 1 Tbl olive or cooking oil
  • 1/4 cup celery, chopped
  • 1/2 Tsp Accent
  • 1/2 Tsp Salt
  • Nutmeg, to taste or dash
  • Pepper, to taste or dash
  • 2 Tbl Brandy, Sherry or Wine
  • 1 stick Butter, melted
  1. Step 1

Place chicken livers in a colander and rinse under cold water to remove any juices.

  2. Step 2

Gently sauté and cook livers in olive oil and salt in a small skillet on top of stove until chicken livers are fork tender. Do not overcook.

  3. Step 3

Mix cooked chicken livers together with other ingredients with beaters or by hand until smooth and creamy. Adjust seasonings to taste.

  4. Step 4

Place cooked chicken liver mixture in a bowl and chill in refrigerator until slightly firm.

Tips & Warnings
