Things You'll Need:
- 1 1/2 cups milk
- 4 eggs
- 1 cup flour
- 1 1/2 tsp. sugar
- pinch of salt
- 1 cup cottage cheese
- 3 oz. cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp. vanilla extract
- 2-3 cups fresh cranberry sauce or 1 can of cranberry sauce
- Electric Hand Mixer
- 9 x 13 inch baking dish

Step 1
To make the crepe for the blintz: In a small bowl beat together the milk and eggs. In a medium bowl mix together the flour, sugar, and salt. Add the flour mixture to the milk mixture. Cover the batter and put in the refrigerator for at least an hour.

Lightly grease an 8 inch skillet. Take 2 Tablespoons of batter and pour into the skillet while gently tilting the skillet so the batter covers the bottom evenly. Let the crepe cook until the top looks dull and a bit dry. Flip the crepe and cook for about 30 seconds. Place the cooked crepe on a wire rack. Once the crepe has cooled, transfer to a plate. Repeat with the remaining batter. Set the plate of crepes aside until you are ready to assemble the blintzes.

Now to make the filling: In a medium bowl, pour the 1 cup of cottage cheese. Beat the cottage cheese with the electric hand mixer until it is smooth and creamy. Add the cream cheese and continue beating until it is well combined. Add the sugar and vanilla extract. Continue mixing until the mixture is smooth and creamy.

In a medium saucepan, heat the cranberry sauce over low heat.

Now it is time to assemble the blintzes: Take 1 Tablespoon of the cream mixture and spread it on a crepe. Roll up the crepe and place in the 9 x 13 inch baking dish. Repeat with the remaining crepes and cream mixture.

Place the baking dish in a 350 degree oven and bake for 8 to 10 minutes. Pull the baking dish out and spoon the cranberry sauce over the blintzes. Serve warm and enjoy!
