How to Candy Fresh Sweet Potatoes

A lot of people use canned sweet potatoes because they think it is easier, but it is simple to make candied sweet potatoes using fresh sweet potatoes.

Instructions

Things You'll Need:

  • 4 large sweet potatoes
  • Water for boiliing
  • 1/2 cup brown sugar
  • 3/4 cup of water
  • 1/4 cup margarine or butter
  • 1 pinch of salt
  1. Step 1

    Wash the sweet potatoes

  2. Step 2

    Place the sweet potatoes with skin on in boiling water. Boil until the sweet potatoes are tender. They should be tender like regular potatoes would be in order to make mashed potatoes.

  3. Step 3

    Drain water and let sweet potatoes cool enough that they are tolerable to touch and hold, and peel the skin from them. You should be able to do this with your hands.

  4. Step 4

    At this point start to preheat your oven to 350 degrees. In a casserole dish begin to mash your sweet potatoes. Mash them as little or as much as you like this is left to your own preferences.

  5. Step 5

    In a sauce pan add the brown sugar, water, butter or margarine and sauce. Cook on medium heat stirring constantly until the mixture forms a sauce. Remove from heat, and pour the sauce over the sweet potatoes and mix a tiny bit.

  6. Step 6

    If you prefer sprinkle some mini marshmallows on the top of your sweet potatoes.

    Bake for 20 minutes, keeping an eye on the marshmallows to make sure they don't burn.

    Remove from oven and serve

Tips & Warnings
  • If sweet potatoes do not peel or mash easily continue boiling them until they do.
  • If marshmallows are starting to burn prematurely move casserole to a lower rack further away from the heat.
  • Don't let the syrup burn, that is why you need to stir constantly, if it burns even a tiny bit it will ruin the flavor. This can burn very easily.
