Things You'll Need:
- For the Breakfast Burritos:
- 6 slices bacon
- 1 small tomato
- 1/2 small green bell pepper
- 3 eggs
- 1/4 cup milk
- 1 Tbsp butter or margarine
- 3 10" flour tortillas
- 1/3 cup shredded Monterey Jack cheese
- parchment paper
- kitchen twine
- For the Basket:
- Breakfast burritos wrapped in parchment paper
- Napkins
- Lunch Pail
- Mug of coffee in spill-proof travel cup
- Banana
- Apple
- Bottled Water
- Map
- CD of Music or a Book on tape
- Roll of quarters

Step 1
To make the filling, line a plate with paper towels. In a medium skillet, fry the bacon over medium heat until crisp, about 2-4 minutes. Transfer the bacon to the prepared plate to drain.

Cut the tomato in half; scoop out the seeds and discard. Remove the core and seeds from the bell pepper. Using a sharp knife, dice both the tomato and the bell pepper.

In a large bowl, whisk the eggs and milk. In a medium skillet, heat the butter over medium-low heat. Pour the egg mixture into the skillet; scramble the eggs until just set, but still moist, about 3 minutes.

To assemble the burritos, stack the tortillas between sheets of paper towels and microwave on MEDIUM until softened, about 10 seconds.

Divide the scrambled eggs among the three warm tortillas, spreading the eggs down the center of each. Top them with Monterey Jack cheese, bacon slices, tomato, and bell pepper.

Starting at one end, roll each tortilla tightly around the filling.

Roll the filled burritos in parchment paper, allowing 1" of the paper at the bottom. Tie with twine and fold up the excess paper at the bottom.

To assemble the gift basket, line a lunch pail with a couple of napkins, either cloth or decorative paper ones. Microwave the burritos on HIGH for 15 seconds and then place them in the pail. Put the other items into the pail, being careful to keep the map from the burritos. Note: You will most likely NOT be able to shut the pail. That's alright, as it will make it look nicer.
