You may have an extra can of pumpkin in your pantry after cooking holiday recipes. Here's a low-calorie way you can use it up and eat a healthy meal at the same time! Remember, pumpkin has loads of vitamin A and fiber, with this recipe, you can enjoy this treat without all of the fat and sugar that normally accompanies pumpkin!

Instructions

Things You'll Need:

  • 1/2 cup pumpkin
  • 1/2 cup oatmeal
  • 1 cup water
  • cinnamon
  • microwave
  1. Step 1

    Find a large cereal bowl, and mix one-half cup pumpkin, 1/2 cup oatmeal (regular, not instant or steel cut), one cup water and 1/4 teaspoon cinnamon together. Put in the microwave for four minutes. Note: The bowl should not be more than half full when you put it in the microwave.

  2. Step 2

    Carefully remove the bowl from the microwave. Stir in the sweetener of your choice, and top with regular or soy milk.

  3. Step 3

    You have just created a healthy snack or meal that will help you stay healthy and lose weight! Pumpkin has lots of fiber and vitamin A, and oatmeal has plenty of fiber as well. You won't be having any stomach growlies on a diet when you incorporate this meal every day!

Tips & Warnings
  • Add up to two tablespoons ground flaxseed to the oatmeal after you have cooked it for extra fiber and Omega 3 vitamins.
  • If you wish, add other spices such as nutmeg, cardamom, cloves or allspice.
  • Walking everyday always helps the weight come off regardless of what sort of diet you are on.
  • Be careful--you will feel like you are eating a yummy pumpkin pie!
