How to Make Fig Pudding

Fig pudding is more of a cake than a pudding and is a traditional Christmas dessert. Originally fig pudding would be steamed but that takes many hours and who has the time? It was common for the puddings to contain silver charms. These charms were thought to bring luck to those who found one in their dessert. There isn't much said about the unlucky individuals who unwittingly choked on their good luck charm.

Instructions

Things You'll Need:

  • 1/2 c. butter
  • 2 eggs
  • 1 c. molasses
  • 2 c. figs, chopped
  • 1/2 t. grated lemon rind
  • 1 c. buttermilk
  • 2 1/2 c. flour
  • 1/2 t. baking soda
  • 2 t. baking powder
  • 1 t. salt
  • 1 t. cinnamon
  • 1/2 t. nutmeg
  • whipped cream or powdered sugar
  1. Step 1

    Preheat oven to 325 degrees.

  2. Step 2

    In a large bowl, combine butter, eggs and molasses. Beat until well mixed. Add figs, lemon rind and buttermilk.

  3. Step 3

    In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon and nutmeg.

  4. Step 4

    Add the dry, sifted ingredients to the fig mixture. Mix all the ingredients together thoroughly.

  5. Step 5

    Pour into a bundt cake pan and bake for 60 minutes. A toothpick inserted into the cake will come out clean with the cake is done.

  6. Step 6

    Let the cake cool and remove from pan. Serve with a dollop of whip cream or a sprinkle of powdered sugar.
