How to Make a Single Crust Turkey Pot Pie

Turkey pot pie is a great way to use some of the leftover turkey from a Thanksgiving or Christmas meal. Turkey pot pie contains meat and vegetables in a seasoned sauce, and can be either an entire pie (pie shell bottom and top) or this easier version with just a pie crust top. This recipe, which can be doubled, makes three hearty servings or six smaller servings to have stomach space for other leftovers like pumpkin pie!

Instructions

Things You'll Need:

  • 1 pie crust
  • 1/2 heaping cup frozen peas
  • 1/2 heaping cup frozen corn
  • 1/4 cup chopped fresh carrot
  • 1-1/2 cups bite-size turkey pieces (light or dark meat)
  • 1/4 cup chopped onion
  • 1/4 cup fresh or canned mushrooms, chopped
  • Olive oil, butter, or margarine for sautéing
  • 3 tablespoons flour
  • 1/4 teaspoon sage (optional)
  • 1/4 teaspoon salt, more or less to taste
  • Pinch of pepper
  • 1 small can chicken broth (about 1 cup)
  • 6 tablespoons milk
  1. Step 1

    Prepare a single pie crust (see Resources, below, for a pie crust recipe); or you can purchase pre-made pie crusts. Shape the dough to fit on TOP of an oven-safe glass dish such as a pie dish or a 5” x 9” baking dish. Rolling the dough out on wax paper is one means to transport the dough from the countertop. Another method is to partial roll the dough over the rolling pin to move it to the baking dish when you are ready (Step 5).

  2. Step 2

    In saucepan, cook the peas and corn according to package directions, and add the chopped carrot to cook along with the peas and corn. Drain and return to sauce pan. Add turkey pieces. Cover but do not return to heat.

  3. Step 3

    In another sauce pan, sauté the onions and mushrooms in olive oil (or butter or margarine) until the onions are tender. Stir in flour, sage (optional), salt, and pepper.

  4. Step 4

    Add chicken broth and milk, and then stir until thickened. Pour into vegetable/turkey pan and mix. Pour all into baking dish.

  5. Step 5

    Transfer the pie crust to cover the filled baking dish. If using wax paper, gently peel the paper back after centering it over the dish. Cut or tear off extra crust.

  6. Step 6

    To allow steam to escape during cooking, cut slits in the top or prick with a fork in several locations across the top of the crust. Bake at 450 degrees Fahrenheit for 12-15 minutes or until the crust is brown. Serve hot.
