Chicken Adobo is one of the Filipino dishes that I've always enjoyed making and eating. Adobo is relatively cheap, easy and fast to make dish and the ingredients can be found in any supermarket. Does this Spark an idea?

  • 3lbs chicken thigh
  • 3/4c white vinegar
  • 1/4c soy sauce
  • 1/4ts peppercorns (crushed)
  • 1/4ts salt
  • 3 garlic cloves (chopped or crushed)
  • 2 bay leaves
  • 1/2 cap of olive oil

Instructions

    • 1

      Before you start make sure you get all the ingredients listed on your right. To start you have to decide what kind of meat you want to put in your Adobo, for sake of authenticity I use chicken drum sticks that are cut into halves.

      Put the chicken in a pot that is at medium temperature and then add garlic, soy sauce, apple cider vinegar, pepper and 2 to 3 bay leaves and a little bit of olive oil.

      Stir and taste continuously as everyone's pallet is different. This is one of the dishes that I make that I rarely screw up however there is a first for everything, I generally start off with small amounts because you can add more flavor as you go along, where as if you add too much you can not take out the additional flavor.
