We love the Original Chex Party Mix as well as Chex Muddy Buddies, the treat that you make with melted chocolate and peanut butter. Recently, I came up with this variation using peanut butter and jelly without the chocolate. You could make it with plain Rice Chex or Corn Chex or a combination of both! Its delicious and something different to try!! We now make this Peanut Butter and Strawberry Jelly Chex Mix as well as Chex Muddy Muddies and have them both on hand for snacking! Enjoy!

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 1/2 c. Chex cereal (Rice, Corn or both)
  • 1/4 c. salted butter
  • 1/2 c. Strawberry Jam or Jelly
  • 1/2 c. Peanut Butter
  • 2 1/2 to 3 c. Confectioner's Sugar
  1. Step 1
Melted butter, jelly and peanut butter

In a large metal pot heat up your butter, strawberry jelly and peanut butter and stir until smooth. Stir on medium heat and keep your eye on it. It will melt fast so be careful not to burn it.

  2. Step 2
    Add Chex cereal

When everything is combined, add your Chex cereal to the metal pot. Stir gently so you break up as little of the Chex cereal as possible.

  3. Step 3
    Chex mix in ziploc bag

Next, pour 2 1/2 c. confectioner's sugar into a large gallon sized Ziploc bag. Then, scoop the Peanut Butter and Jelly coated Chex cereal into the bag. Seal it well.

  4. Step 4

With two hands, gently shake and turn the ziploc bag over and over so that all of the cereal can get evenly coated with the confectioner's sugar. Open it up and look at the cereal. If it doesn't have a dry texture to it, and a white coating of confectioner's sugar, add the remaining confectioner's sugar and shake well. You want it to be dry to the touch so that people can pick it up and not have sticky hands!

  5. Step 5
Store Chex mix in an air tight bag

Pour your finished Chex mix into a new, clean ziploc bag and store closed. Enjoy!
