Hi ya'll! I have a great holiday pie recipe for you coconut lovers out there, Unpredictable Coconut Pie. I do not know why it is called unpredictable, but it tastes out of sight. This is one straight out of my Mama's Cookbook. My kids absolutely love this pie and have begged me to make it way before the holidays come around, lol. I hope you guys enjoy it and come back soon! Make with caution, your family will beg you to make it again and again and again....

Instructions

Things You'll Need:

  • 4 eggs, well beaten
  • 1 3/4 cups sugar
  • 1/2 cup self rising flour
  • 2 cups milk
  • 1/2 stick of butter or margarine, melted
  • 1 teaspoon vanilla
  • 1 can coconut
  • 2 9 inch pie shells
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Beat the eggs well and mix in the sugar. Mix thoroughly.

  3. Step 3

    While mixing, add in the milk, butter, vanilla, flour & coconut. Continue to mix until all ingredients are moist.

  4. Step 4

    Pour the filling into 2 - 9 inch pie shells.

  5. Step 5

    Bake pies in a preheated oven for 30 to 45 minutes, or until coconut browns on top.

Tips & Warnings
  • If you have a newer stove, you may want to dial back the oven temperature 25 degrees.
  • You can pre-bake your shells before pouring in the filling.
