Watch cooking times. Glass pots and pans heat better and cook more evenly than regular metal pans, so it will take less time for your foods to cook. You may want to take your dish out ten minutes sooner than you would if you were using a metal pan.

Reduce the temperature. Since food cooks so much better in glass, you should also reduce the heat needed to cook the food. The general rule is to reduce the heat by 25 degrees F.

Watch your dish. Depending on the type of glass, the cooking time can still vary. Check on your dish every ten minutes to insure the perfect cooking time. Make a note of how long it took the dish to cook so that you will know next time.

Check your recipe to see if it has separate instructions for cooking in a glass dish; many pastry and cake recipes do.

Line your glass pan with aluminum foil if your recipe only has instructions for metal pans. Lay out the aluminum foil and set your pan or dish on top of it. Fold the edges of the foil up the sides of your dish to make sure that you are cutting enough foil for the pan.
