Things You'll Need:
- Chicken bones, and carcass if you have it
- Herbs and spices of your preference
- Celery
- White onion
- Carrot
- Parsley, if you want
- Salt and Pepper to taste
- Water
- String
- Rosemary, if you want
- Bay leaves
- Cheesecloth, if you want
- Knife

Step 1
Add the chicken bones to the water and allow it to boil.

Meanwhile, cut the onion, celery, and carrot into about a cup of each. Half inch cuts are ideal. Try to make the cuts uniform as this aids in the cooking process. Throw them in the water.

You can make a boquet garni by taking to strips of celery and putting things like parsley and rosemary in it, then bind them together with string. Throw this in the mix.

You can make a sachet by taking cheese cloth and placing bay leaves, whole peppercorns and other herbs/spices of preference in there, then close it off with string and put in the pot.

Season the mix with salt and pepper and allow it to cook for up to four hours. Less time is acceptable but if you want to let the flavors really set in, take your time in cooking.

You can skim the top layer of the stock with a ladle or large spoon to rid it of impurities. And voila! You have made the base of chicken noodle soup, as well as the base of many other soups and sauces.
