How to Make Watergate Cake

This recipe was handed down to me from my grandmother and her mother before her and so on for four generations along with hundreds of others in handwritten books of recipes collected over the years. Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 box of white cake mix
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 cup 7-up soda
  • 1 3oz. package pistaschio instant pudding
  • 1 cup chopped pecans
  • 1/2 cup shredded coconut
  1. Step 1

    Preheat your oven to 350 degrees. Mix your cake mix as the box directs.

  2. Step 2

    Mix in slowly your box of instant pstaschio pudding, pecans, coconut, 7-up soda. Beat an additional few minutes to make sure everything is thoroughly mixed.

  3. Step 3

    Bake in a greased and floured 9x13 inch pan 30 to 40 minutes or until cake bounces back when lightly touched. Cool completely on a bakers rack.

  4. Step 4

    Optional frosting:

    2 3oz. packages of dry whipped topping mix (dream whip)
    1 package pistachio pudding (instant)
    1 1/2 cups milk
    mix until thickened and apply to cake when cooled. Top with additional nuts and coconut.
