1
Mix together 1 cup butter and 1 cup sugar in a mixing bowl with a hand or electric mixer until smooth. Add 1 egg yolk, beat and then add the other egg yolk and 1 tsp. vanilla.
-
2
Pour 2 1/2 cups flour into another bowl. Add 1/2 tsp. baking powder and 1/2 tsp. salt. Mix the ingredients together. Pour half of the flour mixture into the first mixture and mix thoroughly. Add the remaining half of the flour mixture and mix again.
-
3
Separate the dough into two balls and flatten each on top of a large piece of plastic wrap. Cover the dough with the plastic wrap and refrigerate for at least 1 hour.
-
4
Roll out the dough on a floured surface to about 1/4-inch thickness for thick cookies or 1/8-inch thickness for thin cookies. Use a onesie-shaped cookie cutter to cut shapes from the dough.
-
5
Place the onesie shapes on a greased cookie sheet. Bake the cookies at 350 degrees F for about 6 minutes. The edges of the cookies should be lightly browned.
-
6
Take the cookies out of the oven and let them cool for 10 to 15 minutes on the baking sheet. Transfer the cookies to a wire rack to continue to cool to room temperature.
-
7
Make the royal icing. Mix together 4 cups confectioners' sugar and 3 tbsp. meringue powder with a hand or electric mixer. Pour in 1/2 cup water and 1/2 tsp. vanilla extract. Beat the mixture at medium-high speed for 5 to 7 minutes. The icing will begin to form stiff peaks.
-
8
Add food coloring to the icing mixture. You can divide the icing into two or three bowls and add different colors to each for different-colored onesie cookies. Cover any icing not used immediately to keep it from hardening.
-
9
Spread a moderate layer of the icing on each cookie. You can spread the icing with the back of a spoon or fill a pastry bag with a flat icing tip with the royal icing and spread.
