How to Make Pumpkin Pie Bars

Baking pumpkin pie bars is easier than making a pumpkin pie. These bars are delicious, simple to make, and are a crowd pleaser.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Crust
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup packed dark brown sugar
  • 1/2 cup butter, softened
  • Filling
  • 1 (12 ounce) can low-fat evaporated milk
  • 1 (15-ounce) can pumpkin
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger, optional
  • 1/4 tsp ground cloves
  • Topping
  • 1/2 cup chopped pecans
  • 1/2 cup packed dark brown sugar
  • 2 tbsp butter Whipped cream, optional
  1. Step 1

    Preheat oven to 350 degrees F. Grease a 13X9 inch glass baking dish. You can use a metal baking dish but you will have to reduce the heat to 325 degrees F.

  2. Step 2

    Prepare the pumpkin pie bar crust by combining flour, oats, brown sugar, and butter. Using a fork, stir just until crumbly. Press firmly into the bottom of your baking pan and bake 15 minutes or until partly set.

  3. Step 3

    Next, prepare the filling by combining pumpkin, evaporated milk, eggs, granulated sugar, salt and spices. Pour this stirred mixture over the baked crust and bake an additional 30 minutes.

  4. Step 4

    Finally, prepare topping by combining pecans, brown sugar and butter. Remove pan from oven and sprinkle the topping over the filling. Bake another 18 minutes, until filling is set. Cool on a wire rack before cutting the squares.

    Makes 30 squares.

Tips & Warnings
  • Serve with whipped cream if you like.
