Here is an easy recipe on how to make salmon croquettes. They are really good and crispy. Serve with rice, salad or any other way you prefer.

Difficulty: Moderately Easy

Things You'll Need:

  • 2 cans of salmon
  • 12 saltine crackers,crushed
  • 2 cups of vegetable oil
  • 1/4 cup green pepper,minced(optional)
  • 1 tablespoon of black pepper
  • 1/2 tablespoon of salt
  • 2 eggs
  • 1 medium onion
  1. Step 1

Open both cans of salmon and pour into a medium or large bowl. Pick out all the bones and discard . Keep half of the juice in the mixture, which will give the patties more flavor and make them taste better.

  2. Step 2

Mix two eggs, salt, pepper and crackers with the salmon mixture. Make sure that it is mixed well. Add more crackers if the mixture is too juicy.

  3. Step 3

Pour two cups of oil into a skillet and heat at medium high temperature. If the grease appears to be too hot, turn it down.

  4. Step 4

Make salmon mixture into medium sized patties and placed into skillet. Cook patties 2-3 minutes or until medium brown. They will be crispy. Serve immediately with your desired side dishes. Refrigerate any leftovers.

Tips & Warnings
  • If you don't like the idea of using crackers, you can use a flour and cornmeal mixture also.
  • You can make a sandwich with these patties. Make the sandwich like you would make up a hamburger. It is really tasty.
