Things You'll Need:
- 4 cups baking mix
- 4 large eggs, beaten
- 2 cups French vanilla ice cream, melted
- 1 cup fresh (if in season) or frozen, thawed strawberries

Step 1
Combine baking mix with beaten eggs and the melted ice cream. Mix thoroughly. There should be no lumps. Chop or slice the strawberries into small pieces.

Heat griddle to 350 degrees F or a large skillet with some cooking oil over medium-high heat. Pour 1/2 cup batter onto griddle or into the heating pan. Pour only 1/2 cup of batter one at a time. This recipe makes eight pancakes; 1/2 cup batter for each.

Sprinkle strawberries on top of pancake. Flip pancake when edges begin to bubble. Remove from griddle when golden brown. Repeat Steps 2 and 3 until you have used up all the batter.

You can use any berry for the strawberry used here. Such as like raspberry, blueberry, boysenberry. Chopped or grind peanuts, walnuts, almonds, cashews can also be used. You can be as creative as you want and use whatever pleases your taste. Just use your imagination.
