Instructions

Things You'll Need:

  • (For The Sweet Potatoes )
  • 6 medium sweet potatoes, peeled and sliced across on the diagonal into 1/4 inch thick pieces
  • 1/2 teaspoon kosher salt
  • 5 tablespoons olive oil
  • (For The Red Onions )
  • 1/4 cup olive oil
  • 5 red onions (1 1/4 pounds)peeled and sliced into 1/4 inch thick pieces
  • 1/4 teaspoon Kosher salt
  1. Step 1

    There will be enough sweet potato slices to fill two 18 x 13 x 2 inch roasting pans. A third pan of the same dimensions will be fine for the onions. About 20 minutes before ready to roast, place 1 rack in the center of the oven, another in the lower third, and 1 in the botton for the onions. Heat oven to 500 degrees F.

  2. Step 2

    For the onions - Pour the oil into the roasting pan. Swirl the pan until the oil evenly covers the bottom. Gently pull apart the rings in each onion slice.

  3. Step 3

    As these rings are separated, put them into the oiled pan. Toss rings in the oil until all are coated. Arrange rings to touch as little as possible. Sprinkle with salt.

  4. Step 4

    For the sweet potatoes - Pour half the oil into 1 of the roasting pans. Smear it around. Using half of the sweet potato slices, take each one and swish both sides quickly through the oil. Do not blot or soak the pieces in the oil.

  5. Step 5

    Arrange pieces in the pan so that they do not touch. Repeat in the second pan. Sprinkle 1/4 teaspoon of salt over each panful of slices.

  6. Step 6

    Place all 3 pans in oven; onions on lowest rack with sweet potatoes on the other two. Roast 25 minutes. Remove 1 pan at a time from oven and use a spatula to turn over each sweet potato slice and each onion ring.

  7. Step 7

    Return pans to oven and use a spatula to turn over each sweet potato slice and each onion ring.

  8. Step 8

    Return pans to oven back to front. Put the pan that was on the highest rack on the middle and vice versa.

  9. Step 9

    Roast 25 minutes more. Pile sweet potatoes on a serving platter. Top with red onion rings, sprinkle with salt, and serve.
