Chicken curry is usually an Indian dish, but my grandmother used to make this soup for me when I was little. I often crave my grandmother's chicken curry. It has that sweet, buttery, spicy taste that have me running back for second and thirds. You'll know what I mean when you try this recipe. It is the chicken curry soup for my soul and hopefully yours. Here's how to make chicken curry soup Asian style.

Instructions

Things You'll Need:

  • 8 chicken drum sticks
  • chicken flavor
  • Olive oil
  • minced garlic
  • 1 pk of curry powder
  • 4 broil yam
  • 1 chopped onion
  • 6 spoons of lemon grass
  • salt
  • pepper
  • 2 cans of coconut milk
  1. Step 1

    Prepare the ingredients by setting everything out. Wash the chicken drumsticks and set them aside. Wash and chop all the veggies and set them aside. Then get ready to cook.

  2. Step 2

    Preheat pan or a wok and add olive oil. Once it is heated, add a couple of spoons of garlic and onions until it is light brown color or caramelize. Next, add curry, lemon grass, 1 spoon of curry power and chicken. Stir until chicken is brown from the outside or half cooked.

  3. Step 3

    In a pot in medium heat add coconut milk, the rest of the curry powder, yam , salt, pepper, and chicken flavor. Stir and taste. Once the soup is heated, add the chicken in the pot. Then let it simmer for an hour or until it is cooked.
