Zucchini Soup

This Zucchini Soup is easy to make and has a rich taste to it but is light on your stomach. Great for the winter! Serves 8.

Instructions

Things You'll Need:

  • 6 Zucchini skinned
  • 3 carrot grated
  • 1 small onion chopped up
  • 6 chicken bouillion
  • 1 can of low sodium chicken soup
  • pepper and salt
  • grinder
  • 8 oz of cream cheese fatfree
  1. Step 1
     Zucchini
    Zucchini

    Wash and Peel the zucchini, (keeping the peel on adds a bitter after taste)

  2. Step 2
    fresh carrots
    fresh carrots

    Peel and grate the carrots

  3. Step 3
    onion
    onion

    Peel the onion and chop it up

  4. Step 4
    cut veggies
    cut veggies

    add all the above vegetables and 4 cups of water in a cooking utensil

  5. Step 5
    chicken broth
    chicken broth

    pour in the can of chicken broth and the chicken bouillon and boil all of the contents till they are tender

  6. Step 6
    blender

    Puree the boiled contents in a blender and put the pureed contents back in the utensil and bring to boil

  7. Step 7
    cream cheese
    cream cheese

    Add in the cream cheese and remove utensil from the heat

  8. Step 8
    crackers
    crackers

    serve soup warm with a few saltine crackers on the side. Enjoy!

Tips & Warnings
  • Can reduce the bouillon to reduce saltiness
  • Use fatfree cream cheese
  • Use low sodium broth and bouillon
