Things You'll Need:
- 3 c. Japanese short grain rice
- 1/2 c Rice Vinegar
- 3 1/3 c. Water
- 1 tsp.salt
- 1/4 c. sugar
- Large pot with lid
- Large Shallow Bowl
- Wood spoon

Step 1
Choose the rice. It is important to use short grain rice and not instant or any long grain rice. You can find this in most Asian grocery stores.

Rinse until clear waterRinse and Soak the rice. You will rinse the rice several times until water is clear. This will get rid of the starch to help it become more sticky. Then soak the rice in the large pot with the water for 20 or 30 minutes.

Prepare rice vinegar. As the rice soaks, prepare the vinegar mix. Add rice vinegar, salt, and sugar to a small pot. Heat ingredients while constantly stirring. Do not let boil, just enough to dissolve ingredients.

Cook the rice. After the rice soaks, boil the water. Be sure lid is on and do not remove it. When the water boils, lower the heat and cook the rice over a simmer for 15 minutes. After 15 minutes, remove from heat and let sit for 10-15 minutes.

Add vinegar mix. After rice cools a little, add the vinegar mix and stir with rice into large wooden bowl.

Sushi RollsPrepare immediately. Use the rice right away to make great sushi rolls. Enjoy!
