Things You'll Need:
- 15 Cups Ground Zucchini
- 5 cups ground onion
- 7 Tablespoons Salt
- later you'll need this;
- 3 cups cider vinegar
- 7 cups sugar ( white)
- 2 tsp. nutmeg
- 1 1/2 tsp. dry mustard
- 1 1/2 tsp. turmeric
- 1 tsp. cornstarch
- 3 tsp. celery seed
- 1 tsp. black pepper
- 3 green peppers (seeds removed and ground up)
- 3 red peppers (seeds removed and ground up)

Step 1
Do you have a big garden and grow lots of Zucchini?? We do too, and this is a great tasty way to use up the extra zucchini: It's not that hard really and you'd be surprised at how good this is on sandwiches or just to eat as is with your other dishes;

The Ingredients you need you'll see off to the side here just follow
along step by step and this won't be that hard to do;
Make sure your pint jars or quart jars, lids & seals are all nicely
washed and dried and ready to use ok? -
Step 3
You're also going to need a great big bowl and mix up the 15 cups of ground zucchini ( yes that's 15 cups) , add the 5 cups of ground up onion
and 7 Tablespoons of Salt;
Cover these ingredients with ice water and let stand 2 hours or overnight in your refrigerator.
Drain and rinse well in cold water.
In a LARGE Kettle combine the onions and Zucchini and all of the following ingredients next: -

Sweet Zucchini RelishNow in your big kettle add the;
3 cups of cider vinegar
7 cups sugar ( white of course)
2 tsp. nutmeg
1 1/2 tsp. dry mustard
1 1/2 tsp. turmeric
1 tsp. cornstarch
3 tsp celery seed
1 tsp. black pepper
3 green peppers ( seeds removed and ground up)
3 red peppers ( seeds removed and ground up)
Cook for about 35 minutes.
Afterwards fill up your quart jars or pint jars, that have been sterilized using very hot water.
Be sure your jars have sealed the next day, they should seal properly
within like 20 miuntes to a few hours;
If you find a jar not sealed the next day just put that jar in
your refrigerator and use it right away.
It will of course keep for several weeks in your ref.
This dish will complete most meals, sandwiches, it has so many uses;

and its just not that hard to do right?
