Things You'll Need:
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 Eggs
- 1 Cup oil (I use olive oil) My mom used vegetable oil
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 3 cups grated raw carrots
- Optional- 1/2 cup chopped walnuts or pecans
- Cream cheese frosting
- 2 9in round cake pans OR 1- 13 X 9 in rectangle pan

Step 1
A metal hand grater will work tooWash and PEEL carrots. Cut off the stem end and discard. Prepare in a food processor. Make sure they are grated finely.

Mix all ingredients in a large bowlPreheat oven to 350 degrees. Grease and flour the bottom of the cake pan(s). If you are not using a non stick pan, lightly grease the sides too.

Put the eggs in a large bowl, and beat with a wire whisk. Add the 1 cup of oil. Stir in the 2 cups of sugar, the cinnamon, the baking soda, and the salt.

Distribute evenly between round pansNext stir in the flour, a little at a time to keep it from lumping up.
When smooth, fold in the grated carrots. Pour the batter into the prepared pans and put in the oven. Bake for 45 minutes for 13 X 9 pan,
30-35 minutes for 9 inch round pans. Test for done ness by inserting a tooth pick in the middle of the cake. It should come out clean if the cake is done. -

Carrot cake is a winner at our house!Now top with your favorite cream cheese frosting recipe. To add a fun little perk, sprinkle a little brown sugar over the frosting. It tastes great!
