The original Bath Buns which originated in Bath in England were similar to, but not as sweet and fruit-filled, as these.

Instructions

Things You'll Need:

  • 1 cup of butter
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 4 large eggs
  • 2/3 cup whole milk
  • 2 packages of yeast
  • 1/3 cup warm water
  • 4 cups all-purpose flour
  • 2/3 cup citron, chopped fine
  • 2/3 cup currants
  • 1/2 cup slivered almonds
  • cream
  1. Step 1

    Place the warm water and yeast in a small bowl. Leave to rise. Meanwhile, cream together the butter, sugar and salt. Beat the eggs well. Beat the milk into the eggs. Add the egg mixture, all at once, to the butter mixture and beat until smooth. Stir in the dissolved yeast.

  2. Step 2

    Stir together the citron, the currants, and the almonds. Stir about 1/2 cup of the flour into the fruit mixture. Add the fruit mixture to the butter mixture and blend well. Stir in the rest of the flour, gradually, until the dough it firm enough to handle. Turn out on a floured board and knead until dough is smooth and pushes back against you hand as you knead. This kneading will take about 8 to 10 minutes. Place dough in a buttered bowl. Roll dough around so the surface is all buttered. Cover bowl and place in warm area to rise until doubled.

  3. Step 3

    Butter cookie sheets. Punch dough down. Remove from bowl and divide into 20 equal pieces. Place the buns on the buttered sheet and brush all over with cream. Sprinkle the buns with granulated sugar. Cover and return to a warm place to rise again until doubled. Heat oven to 375 degrees.

  4. Step 4

    When buns have doubled in size, place them in the pre-heated oven and bake for approximately 25 minutes. Cool on racks. Enjoy!

Tips & Warnings
  • If you wish, you could sprinkle the buns, before baking, with additional chopped nuts or coloured sugar.
