Things You'll Need:

Step 1
CleanWhat a wonderful time of year. It would be dreadful to ruin such an occasion with a dry turkey. Even worse a raw turkey. To top it all a burnt turkey. Turkeys are really not that hard to prepare. Make sure you unthaw the turkey before starting to prepare it. After the turkey is unthawed remove the inside usually it's wrapped up in a wax paper or plastic of some sort. Make sure you remove all the inner extra portions of the turkey. Really this is important once I cooked my turkey half way to discover half cooked guts and such it grossed me out. Any way after removing the inside of the turkey wash turkey thoroughly inside and out.

Step 2
SeasonLay turkey on back. Slide your hand under the top of the turkeys skin making an opening for butter and seasoning. Lift up as much skin as possible WITHOUT disconnecting skin from bird. Cut butter in 1 inch wide squares place butter under skin of turkey. Season skin with tablespoon of salt, 1/2 tablespoon of sage, 1/2 tablespoon of black pepper. Cut up onions in blocks and stuff inside turkey. You can also put garlic inside it give the turkey a more seasoned flavor.

on 11/25/2008 i've heard about cooking turkeys in bags - do they brown this way? Sounds like a good way to insure a moist bird. Thanks for this 1.
