Things You'll Need:
- 2-3 slices of salt pork or bacon chopped into bits
- ½ cup chopped onion
- ¼ cup chopped celery
- ¼ cup chopped carrots (optional)
- 2 cloves garlic smashed and chopped
- ¼ c chopped bell pepper
- 1 package (10 oz) frozen lima beans
- 2-3 cubes of chicken bouillon
- ½ cup cream
- 1 t curry power
- roux- if desired (see recipe)

Step 1
Sauté chopped bacon or salt pork in medium saucepan until nearly crisp. Add onion, and celery, stir and sauté a minute or two, then add garlic, cooking and stirring a minute or 2 more.

Add lima beans, barely cover with water. Heat to simmering. Add bouillon cubes stirring until dissolved and cover and simmer until lima bean are tender as you like them. Add cream and curry powder, stirring well.

Step 3
If desired, thicken with roux made by slowly browning 2 T flour in 2 T butter or oil. Add roux to soup and continue too cook over low to medium heat a few minutes, watching and stirring until thickened.

Season to taste. Delicious served with warm from the oven biscuits or crispy garlic bread. Enjoy!
