Peanut Butter fudge is a fond memory from my childhood. This recipe is quick and delicious.
This recipe is a simple variation of the microwavable chocolate fudge recipe that I published earlier. Simply swap out the peanut butter for 1/2 cup of cocoa.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1lb. box of confectioners sugar (equivalent to 2 3/4 cups)
  • 6 Tablespoons Butter (don't use spreads which contain water)
  • 3/4 cup smooth peanut butter
  • 1/4 cup milk
  • 1 Tablespoon vanilla extract
  • 1/4 teaspoon salt
  1. Step 1

    In a large microwavable bowl place the butter, milk and salt and peanut butter. Microwave on high 1 1/2 to 2 minutes or until the butter is melted and the peanut butter is soft.

  2. Step 2

    Stir in the vanilla extract until the butter and peanut butter are well blended. Stir in the sugar until the fudge becomes stiff.

  3. Step 3

    Spread the fudge into a buttered 9x5 loaf pan. Cool. If you're in a hurry, you can place it in the refrigerator or freezer for a few minutes until it sets. Cut and Eat!

  4. Step 4

    You can substitute other nut butters for the peanut butter. Ones to try, almond butter, cashew butter, tahini. The amount of sugar you will use may vary.

Tips & Warnings
  • For best flavor store fudge, covered, in the refrigerator
  • This fudge can set up as fast so be sure to get it into the pan.
