This is one of the cookie recipes that makes it onto my Christmas baking list year after year. They are so tasty, pretty and easy! The candy cane provides a gentle peppermint flavor without being overpowering. (However, if you prefer a stronger flavor, you can add 1/2 - 1t. peppermint extract along with the vanilla.)

Kids can easily help make these as well. They can crush the candy canes with a rolling pin, roll the dough into balls, and roll the balls in sugar.

Instructions

Things You'll Need:

  • 1 1/4 c. butter or margarine, softened
  • 1 1/2 c. powdered sugar
  • 1 t. vanilla extract
  • 1 egg
  • 3 c. flour
  • 1 t. baking powder
  • 1/4 t. salt
  • 1/2 c. crushed candy canes
  • 1/4 - 1/3 c. granulated sugar
  1. Step 1

    Cream together butter or margarine and powdered sugar. Add vanilla and egg, mix for another 2 to 3 minutes, until well combined.

  2. Step 2

    In a small bowl, whisk or sift together flour, baking powder and salt. Slowly add to butter mixture and stir until combined. Fold in crushed candy cane pieces.

  3. Step 3
     

    For each cookie, roll about 1 t. dough into a ball then roll in granulated sugar to cover. Bake at 350 degrees for 10-12 minutes.

Tips & Warnings
  • If you want to make these cookies a little fancier, you can drizzle a powdered sugar glaze over the top and sprinkle with more crushed candy cane pieces.
