How to Make a Healthier Alternative to Mashed Potatoes

We all love mashed potatoes...but how about a healthier version? Forget all those starchy carbohydrates and the cream and the butter! Try this healthy alternative made with cauliflower and white beans!

This is my recipe for: "Garlic Smashed Mock Potatoes"

These are much lower in calories and carbohydrates when compared to traditional mashed potatoes, which are often loaded with butter and high fat cream.

Instructions

Things You'll Need:

  • 1 head of cauliflower
  • 1 can of white beans
  • 2 Tbsp olive oil
  • Parmesan cheese, grated
  • skim or soy milk
  • fat free sour cream
  • garlic powder
  • provolone cheese
  • parsley
  • white pepper
  • salt
  1. Step 1

    Clean cut up the fresh cauliflower Microwave it with some water or steam it until it is tender and fork mashable.

  2. Step 2

    In a blender, mix well the cooked cauliflower, beans, and olive oil.

  3. Step 3

    Add 1 - 2 Tbsp. each of the skim milk and fat free sour cream. Continue to add these items until the mixture has reached a desireable level or creaminess.

  4. Step 4

    Now for flavor, sprinkle in some parmesan cheese, and add 1 - 4 ounces of provolone cheese, to taste. Likewise for the salt, garlic and white pepper. Add just enough parsley to add some color.

Tips & Warnings
  • You can make this creamier by running the cauliflower and the beans through a food processor.
  • Once finished mixing and transferred to a serving dish, you can dust the top with extra parmesan cheese and parsley for more visual appeal.
  • Be careful when adding milk and sour cream. Add these items slowly to prevent making this dish to liquidy.
