Easy Sweet Potato Biscuits. If you love sweet potatoes, you'll simply adore these quick and easy sweet potato biscuits. They're the perfect accompaniment to a holiday feast!

Instructions

Things You'll Need:

  • 2-1/2 c. Biscuit Mix
  • 3/4 c. Sweet Potatoes, smashed
  • 1/4 c. Sugar
  • 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Nutmeg
  • 1 Tbs. Milk
  • 1/2 c. Butter or Margarine
  1. Step 1

    Preheat oven to 400 degrees. In large bowl combine biscuit mix and butter (or margarine). Cut in thoroughly until mixture resembles course crumbs.

  2. Step 2

    In separate bowl, blend together sweet potatoes, sugar, cinnamon, nutmeg and milk. Mixture will be slightly lumpy. But not to worry, the lumps will disappear while the biscuits are baking.

  3. Step 3

    Add potato mixture to biscuit/butter mix. Stir until all ingredients are combined. Batter will be lumpy.

  4. Step 4

    Remove mixture to floured surface. Roll or pat dough to 3/4" thick. Flouring hands or rolling pin as needed to avoid sticking.

  5. Step 5

    Use cookie cutter to cut out uniform biscuits. Place on ungreased cookie sheet.

  6. Step 6
    Yum!

    Bake at 400 degrees for 15 minutes or until biscuits are golden brown. Brush with butter and enjoy while hot!

Tips & Warnings
  • Sprinkle each biscuit with ground cinnamon prior to baking for extra taste!
