Tired of chocolate chip cookies but still want cookies? Try Almond Butter Cookies, they are great for occasions or just because!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3/4 Pound Unsalted butter; at room temperature (3 sticks)
  • 1 Cup; plus 2 tablespoons granulated sugar
  • 6 Large Egg yolks
  • 1 Teaspoon Pure vanilla extract
  • 3 Cups; plus 2 tablespoons bleached, all−purpose flour
  • 3/4 Teaspoon Salt
  • 1/2 Pound Almond slices
  1. Step 1

    Cream the butter and sugar in a large bowl until it is nice and fluffy, scraping down as needed. Add the egg yolks one at a time, mixing thoroughly, then add in the vanilla.

  2. Step 2

    Add the flour and salt to the butter mixture until it smooth, then mix for about 2 more minutes until it thickens. Dust a piece of wax paper with the remaining 2 tablespoons of flour, put the dough down the middle of the paper, fold the paper over, and pop it into the fridge for 8 hours.

  3. Step 3

    Pre-heat your oven to 350 degrees, then grease a baking sheet, and place the dough in either rounds balls or flat circles on it, making sure to leave enough room for them to spread while they cook. Sprinkle the almonds over the cookies and press them firmly in the dough. Cookie for about 20 minutes. Enjoy!
