Things You'll Need:
- 1 pint (2 cups) oysters in own liquid
- 5 cups fresh bread crumbs
- 1 cup butter (do not substitute margarine)
- 1 cup chopped mild onions
- 1/2 cup sliced celery
- 1/2 cup chopped fresh parsley
- salt and pepper to taste
- the juice if 1/2 a lemon
- a little white wine or water

Step 1
fresh oystersShuck or buy ready shucked oysters in their own salty juice.

bread for stuffingPrepare bread crumbs by chopping in squares with a knife. Use day old or two-day old bread for your stuffing.

Melt the butter in a heavy saucepan on the stove over medium heat; add the onion and celery and cook until they are soft and golden brown.

oyster stuffingAdd the butter, onions, and celery to the bread crumbs, along with the parsley, seasonings, lemon juice, and the oysters. Cut the oysters in half if they are really large. If the stuffing seems too dry, then add just a little white wine or water, but the stuffing must not be too soft.

roasting pan for turkeyFill the turkey cavity with the stuffing and sew or fasten the cavity shut. Cook turkey in the oven as you usually do, or see resources below for how to roast and prepare turkey. This oyster stuffing recipe will make about seven cups of delicious oyster stuffing.
