How to Make a Russian Sweet Beet Salad-YUMMY

Preparing Russian salads is always a treat for a hostess. One of my favorite salads in the entire world is the Russian Sweet Beet Salad and I had to search long and hard for a recipe. This recipe does not include the garlic version partially because I hate garlic.

Instructions

Things You'll Need:

  • 5-6 medium sized beets
  • 1/2 chopped walnuts
  • 1/2 mayo
  • 20-30 pitted dried prunes
  • salt
  1. Step 1

    Place the 5-6 beets in a saucepan/soup pot and fill the pot with enough water to cover the beets. Bring them to a boil (which will take about 5-7 minutes) and then slowly cook them under medium heat until the beets are pierce able. This will take about 20 minutes. Once the beets are soft, run the pot under cold water for about a minute.

  2. Step 2

    Peel and grate the beets in a serving bowl. Grate the walnuts and cut the prunes into small pieces and add the mixture to the grated beets.

  3. Step 3

    Put mayo and a pinch of salt into the mixture and mix everything.

Tips & Warnings
  • You can add garlic to this mixture if you'd like.
  • You may substitute yogurt or sour cream instead of mayo making this a dessert salad.
  • Don't add too much salt.

on 1/14/2009 We ate at a Ukrainian restaurant that made a salad similar to this one. The salad seemed to have raw beets, peeled, julienne cut, and marinated in a sweet and sour mixture, then drained before adding the mayo, garlic, nuts, prunes, & salt. The dressing seemed to be slightly sweetened. There may have been some yogurt or sour cream in it. It was so fabulous!!!
