If you need more dessert than one pie this is the solution for Thanksgiving. This bar recipe makes a large pan and is excellent in pumpkin flavor. Have a really great Holiday Season and for more great ideas and information go to www.organicbagsonline and www.vshfree.etsy.com

Instructions

Things You'll Need:

  1. Step 1

    Preheat oven 350 degrees.
    Butter large cookie sheet
    Using a mixer, beat 4 large eggs.
    Add 2 cups sugar, mix well.
    Add 1 1/2 cups vegetable oil and 1 small can of pumpkin
    Blend well.

  2. Step 2

    In large bowl add 2 cups flour
    2 teaspoons baking soda
    3/4 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    Mix well using a whisk
    Slowly add to the pumpkin mixture and mix well.

  3. Step 3

    Add 1 teaspoon vanilla and blend well.

    Pour into greased oversized cookie sheet and bake 18 to 20 minutes.
    Ovens vary so be sure and check your bars for doneness. Check center with a cake tester or toothpick. Do not over bake.

  4. Step 4

    Remove from oven and let cool.

    Frost with cream cheese frosting. You can buy the ready made frosting or you can make frosting. See recipe below.

    1 1/2 to 2 cups powdered sugar
    1/2 stick of butter (1/4 cup)softened
    1 teaspoon vanilla
    3 ounces softened cream cheese

Tips & Warnings
  • Beat the cream cheese before adding the rest of the ingredients to the frosting.
