Spring rolls are made with light rice paper and not fried compared to egg rolls that use a deep fried shell. In Vietnamese restaurants you will often see shrimp spring rolls on the menu. Follow these steps to make spring rolls with shrimp.

Instructions

Things You'll Need:

  • Spring roll wrappers
  • 1/4 cup rice noodles
  • 4 lettuce leaves
  • Small carrot
  • 2 tbs bean sprouts
  • 12 medium size prawns
  • Handful of mint and coriander
  1. Step 1

    Cook the rice noodles. Cook noodles according to directions. Rinse in cold water, chop and set aside.

    Prepare ingredients. Chop carrot into thin strips. Cut cooked and thawed shrimp into small bite size pieces. Chop mint into small pieces. Place all other ingredients out for easy filling.

    Fill shallow tray with hot water. Place spring roll wrapper into water for about 15-20 seconds. It should be soft and pliable. This is a delicate process and will get easier with practice. It may stick to itself or rip, so be careful. Gently place the shell unfolded on a wet tea towel onto a plate.

  4. Step 4

    Add ingredients. Evenly distribute the lettuce leaf, noodles, carrots, bean sprouts, mint and coriander into the shell.

    Carefully fold the wrapper. Fold the bottom up over the filling. Then fold in the sides, covering the filling, Then roll upwards to form a neat roll shape. This, too will take practice and look better each time.

  6. Step 6

    Serve immediately. Eat alone, or with dipping sauce, such as sweet and sour chili dipping sauce.

Tips & Warnings
  • Roll gently to avoid tearing.
  • Fresh ingredients will taste best!
