Things You'll Need:
- 2 Tbs. chickpea miso
- 1 1/2 tsp stoneground mustard
- 1 organic lemon
- 3 Tbs. water

Step 1
Combine miso, mustard, 3 TBS fresh lemon juice and water. Mix well. If you want a thinner sauce, add a little more water. This makes a thick, strongly flavored sauce that can be drizzled over beans, grain dishes, vegetables and salads. It also makes a great sandwich spread.

Variation: use orange juice instead of lemon juice for a less tart sauce.

Variation: sautee some onions and garlic or shallots and add to the sauce.

As a sauce, it goes well with tempeh, refried red beans, steamed vegetables, spinach, salads, and bean and grain dishes like chickpea loaf. Try it with rutabaga fries! See the Resources section for links to easy vegan recipes that combine well with miso mustard sauce.
