French onion is a family and holiday favorite for dips, but let's not forget that it's really a soup, here's how to make it!

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 cups sliced onions
  • 4 (10.5 ounce) cans beef broth
  • 1/2 cup unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons dry sherry (optional)
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 1 (1 pound) loaf French
  • bread, sliced
  • 6 slices provolone cheese
  • 3/4 cup diced Swiss cheese
  • 1/4 cup grated Parmesan cheese
  1. Step 1

    Let's dig out that crock pot, and melt the butter in it. Next, stir in the olive oil, and the onions, and cook until they are tender, but don't brown them.

  2. Step 2

    Add in the beef stock, thyme, and sherry (don't worry, it cooks out), then mix in the salt and pepper. Let is simmer with the lid on for about 30 minutes.

  3. Step 3

    Put the soup into individual, oven safe, serving bowls
    and place one slice of bread on top. Layer your cheese on
    top of bread then put a slice of provolone, 1/2 slice diced
    Swiss and Parmesan cheese on top of these. Put the bowls on a cookie sheet or metal bread sheet pan and broil until the cheese melts. Enjoy!
    (The toppings are optional, but it is a nice way to get more than just soup out of the meal!)
