This is a fun Spritz cookie that uses Jell-O for the coloring and flavor. This recipe comes from my cousin Joyce. I have been collecting family recipes for over 30 years now. I hope to one day write a family cookbook. You can use any Jell-O flavor of your choice. For example you could make red & green Christmas Cookies out of cherry & lime Jell-O. There are currently 20 different flavor of Jell-O. They are apricot, berry blue, cherry, cranberry, grape lemon lime, margarita, mixed fruit, orange, peach, pina colada, pineapple, raspberry, strawberry, strawberry-banana, strawberry daiquiri, strawberry kiwi, watermelon & wild strawberry. When making Spritz I always use butter and I never chill the dough.

Instructions

Things You'll Need:

  • 3 1/2 cups all-purpose flour, sifted
  • 1-teaspoon baking powder
  • 1 1/2 cups butter
  • 1 cup granulated sugar
  • 1 (3 ounce) box Jell-O Gelatin, any flavor
  • 1 egg
  • 1-teaspoon vanilla extract
  • Additional Jell-O Gelatin for sprinkling over cookies before baking
  • Cookie press
  • Mixing bowls
  • Parchment paper
  • Electric Mixer
  • Baking sheet
  • Oven
  • Wax paper or a cooling rack
  1. Step 1

    In a large mixing bowl beat the butter with an electric mixer for about 30 seconds. Add granulated sugar and Jell-O. Beat until combined. Occasionally scrap the sides of the bowl. Next add the egg, vanilla and blend well.

    In another mixing bowl sift the flour and baking powder together. Gradually add the flour into the butter mixture. Beating until well blended.

    Force un-chilled cookie dough through a cookie press onto the cookie sheet with parchment paper. Sprinkle cookies top with Jell-O Bake in a pre-heat 375-degree oven for 8 to 10 minutes. Bake until edges are golden

Tips & Warnings
  • Through the years I have notice that not every oven cooks the same. So watch your first batch of cookies to see how long it takes for the edges of the cookies to golden or set.
  • You can pick up a hand turned cookie press inexpensively on E-bay. The battery operated version will cost anywhere for $20 to $40
  • I have both a hand turned cookie press and a battery operated cookie press. I get good results with both. But if you want to GO GREEN use the hand turned cookie press. No batteries to buy or throw away : )
