How to Make a Hearty Vegetable Beef (Hamburger) Soup

This soup is so warm and inviting. There are lots of variations you could try using the basic ingredients, IE: use ground turkey instead of ground beef, add other vegetables that your family may prefer. This is my mom's recipe and each time I make it, it brings back wonderful memories. I usually start this soup early in the day and allow it to simmer several hours. You could make this soup in the crock pot or use a large pot on the stove top. There is always enough to share. This soup also freezes well. Add bread, crackers or a sandwich and Enjoy!

Instructions

Things You'll Need:

  • 1-1.5 lbs Ground Beef
  • 2 Large cans of seasoned diced tomatoes (I use tomatoes that have basil, garlic and oregano)
  • 2 Cans of tomato sauce or tomato paste
  • 4 Cups of diced potatoes
  • 2 Diced onions
  • 2 Cans (frozen and fresh) baby butter-beans (Lima)
  • 2 Cans of white/yellow corn
  • 1 Cup of catsup
  • Salt and pepper to taste
  • Water -Approximately 1 can of water per can of vegetables and sauce. Adjust as needed. It is a good way to use all of the contents left in the can and get the cans ready for recycling:)
  1. Step 1

    Begin your soup by dicing your potatoes and onions. Place the diced vegetables into the cooking or crock pot.

  2. Step 2

    Add tomatoes, tomato sauce or paste, butter beans, corn, water, catsup and seasonings to the cooking pot. Blend all ingredients well.

  3. Step 3

    Bring to a boil then turn the heat down so that the soup is simmering.

  4. Step 4

    While your soup is simmering, brown the ground beef, mashing it up as it cooks. Once browned, drain the meat and add to your simmering soup.
    *Add onions once the soup is simmering.

  5. Step 5

    Stir often during the boiling process then as needed during the final cooking process. Once the potatoes are done, all that is needed is to serve up and enjoy!

Tips & Warnings
  • Adding onions after the initial boiling seems to maintain the flavor better.
  • This recipe makes a large pot of soup- approximately 6 quarts. Just cut the recipe in half for less soup or fill your freezer.
  • This recipe could be addictive:)
