Things You'll Need:
- 1/2 cup of uncooked red beans or aduki beans
- 3 cloves of garlic, peeled but whole
- light (not toasted) sesame oil
- 1 onion
- 1 small mild red or green pepper
- sea salt

Step 1
Rinse the beans and add to a large pot. Add a small 1" x 1" piece of kombu seaweed (optional, to tenderize and add minerals). Add 3 pieces of peeled but whole garlic.

Cover with water and bring to a boil. Turn down heat to medium-low, cover, and cook for about 2 hours or until soft.

Add sea salt to taste. The beans should be a little bit saucy, but if there is a lot of water left, turn up the heat and boil most of it off.

Add 2 tablespoons of sesame oil to a large stainless steel frying pan and put on the stove on medium-low. Chop the onion and pepper into small pieces. When the oil is hot (3-5 minutes), add the onion and sautee for 5-10 minutes. Add the chopped pepper. Sautee for 5 more minutes.

Add 1 cup of cooked beans and stir. Add a few tablespoons of sauce from the beans, cover, and turn down the heat to low. Let the flavors blend for about 15-20 minutes, or longer.
