Things You'll Need:

  • Onion soup with leeks and shallots
  • Oven-grilled marinated portobello mushrooms
  • Chestnut bake with miso-mustard sauce
  • Mushroom and wild rice stuffing
  • Chickpeas with creamy lemon pecan sauce
  • Roasted root vegetables
  • Sweet potato and cranberry hash
  • Arugula and watercress salad
  • Daikon pickle
  • Praline pumpkin pie
  1. Step 1

    Onion soup. This soup is rich with caramelized onions, and the addition of leeks, shallots, garlic and chives takes simple onion soup to gourmet heights.

  2. Step 2

    Oven-grilled marinated portobello mushrooms. Sage-infused grilled marinated portobello mushrooms can serve as the centerpiece of your vegan Thanksgiving dinner.

  3. Step 3

    Chestnut bake with miso-mustard sauce. This is a healthier and more sophisticated alternative to mashed potatoes.

  4. Step 4

    Mushroom and wild rice stuffing. This simple stuffing is less heavy and starchy than traditional stuffings using bread.

    Chickpeas with creamy lemon pecan sauce. For a simpler bean dish, try refried red beans.

    Roasted root vegetables. This recipe calls for adding portobello mushrooms to the root vegetables. Since you have another portobello mushroom dish, you can leave them out of this one and it will still be delicious.

    Sweet potato and cranberry hash. An amazing combination of two Thanksgiving treats. The recipe calls for butter, so substitute light (not toasted) sesame oil or Earth Balance spread. You can also cut it down from 3 tablespoons to 1 and it will still taste great!

    Arugula and watercress salad with flax and turmeric vinaigrette. A crisp, peppery salad with a light dressing. Wash and combine 2/3 arugula with 1/3 watercress and put them in a large salad bowl. Optionally add thinly sliced cucumbers and very thin slices of red onion. Toss with flax and tamari vinaigrette.

    Daikon pickle. Daikon pickle helps cleanse the palette and aids in the digestion of fats. Buy a package of daikon pickles in the macrobiotic section of the supermarket or make your own. Add a few slices to each plate. Alternatively, just grate some fresh raw daikon or red radish and add a tablespoonful to each plate.
