This is easy, it is cheap, and it is DELICIOUS!

Instructions

Things You'll Need:

  • butter sugar egg vanilla extract all-purpose flour baking powder salt
  1. Step 1

    1/2 cup butter (no substitutes)
    1 cup sugar
    1 egg
    1 tablespoon vanilla extract
    1 1/3 cups all-purpose flour
    3/4 teaspoon baking powder
    1/4 teaspoon salt

  2. Step 2

    Preheat oven to 350 degrees F.

  3. Step 3

    In a mixing bowl (or your stand mixer), cream butter and sugar together until the mixture is light and fluffy looking.

  4. Step 4

    Beat in egg and vanilla

  5. Step 5

    Combine dry ingredients in a separate bowl and slowly add to creamed mixture and mix well.

  6. Step 6

    Pour dough on to wax paper. Roll dough into a log on the wax paper, Roll dough up in the wax paper, than freeze. for 1 hour.

  7. Step 7

    When dough hardens it's ready to be cut.
    Cut dough into 1/4 inch circles lay on cookie sheet 1 inch apart

  8. Step 8

    Bake at 350 for 12 -15 minutes or until edges are golden brown.
    Cool on a wire rack.

Tips & Warnings
  • The dough freezes well; simply roll into a log and wrap in plastic wrap. Freeze. Then slice off cookies and bake
  • If you wish to make the cookies chocolate, add 2 tbl baking cocoa.
  • Cookies can be used for making your rum balls.

on 12/15/2008 My kids love vanilla wafers and boy are they starting to get pricy. I never saw a recipe for vanilla wafers until now. I will certainly try it out. Thanks for sharing.
