This is an old lebanese recipe that has been passed down through my family.

Instructions

Things You'll Need:

  • 3 bunches of parsley
  • 2-3 scallions
  • 4 sprigs of fresh mint (or 4 tblsp of dried mint)
  • 1/2 cup olive
  • 2 cloves garlic, minced
  • 1 cup fine bulgur
  • 5 tomatoes
  • 6-8 lemons
  • 1 head of lettuce (romaine)
  1. Step 1

    First, pick the mint leaves off the stems and set aside in a bowl. Next, tear up the floret parts of the parsley leaving the stems aside. Add to bowl with mint. Wash and rinse both.

  2. Step 2

    If you do not have a food processor, mince the mint and parsely until extra fine (not pureed).

  3. Step 3

    Wash the bulgur and squeeze the water out. Add to the mint and parsley.

  4. Step 4

    Add minced scallions, 3 minced tomatoes and garlic. Next squeeze fresh lemon juice until desired tartness is attained. Add salt and pepper. Then add olive oil to taste.

  5. Step 5

    Chill in the fridge for at least an hour. Tabouli tastes fresh and delicious after several days and some swear that it tastes best after sitting overnight.

  6. Step 6

    To serve, place on clean strips of romaine lettuce. Also serve with flat bread and hummus. Enjoy!
