This is one of my favorite recipes for low-fat guacamole.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 large ripe avocodos
  • 2 tablespoon lime juice
  • 3 tablespoon finely chopped cilantro
  • 1/2 teaspoon salt
  • 1 clove of garlic finely diced
  • 2 small tomatoes finely chopped
  • 1 small or medium sweet onion finely diced (recommend using food processor)
  • 2 tablespoon chopped green or red chilis
  1. Step 1

    Cut avocados in half, remove pit and peel. Mash the avocados in a bowl until smooth.

  2. Step 2

    Mix the remaining ingredients (chilies, lime, cilantro, salt, garlic, tomatoes, and onion). I highly recommend blending the garlic and onion in a food processor prior to mixing them in the guacamole.

  3. Step 3

    Cover and refrigerate at least one hour prior to serving. It is important that you let sit for one or more hours so that the flavors have a chance to saturate naturally.

  4. Step 4

    Serve with warmed tortilla chips or on sandwiches. I guarantee that your guests will go back for seconds so you may want to make a double batch!

  5. Step 5

    Extra Note: Make sure that the avocados are ripe. To find a ripe avocado, find ones that are soft when lightly squeezed (they are two soft if they feel as though skin may tear).
