Go against the norm and make chili healthier with turkey.

Instructions

Things You'll Need:

  • 5 tbsp olive oil
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 2 turkey breasts, cubed
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tbsp chipitle powder
  • 2 tbsp paprika
  • 1 can stout beer
  • 1 3/4 cup crushed tomatoes
  • 1/2 pound sun-dried tomatoes
  • 4 tbsp balsamic vinegar
  • 2 cups brown rice
  • 4 cups chicken stock
  • 2 pound pumpkin, peeled, seeded and cubed
  • 1 tbsp unsweetened cocoa powder
  • 1 cup chopped cilantro
  1. Step 1

    Put 3 tbsp of the oil in a large pot and coat the bottom. Heat it on medium-high. Add the onion and garlic and let them simmer for a bit. Add the turkey, oregano, cumin, chipotle powder, and paprika. Cook this mix until the turkey becomes brown. Add the beer, tomatoes, sun-dried tomatoes, vinegar, chicken stock, and rice. Bring the pot to a boil and simmer for 30-40 minutes.

  2. Step 2

    In a separate bowl, coat the pumpkin cubes with 2 tbsp oil, salt and pepper, cocoa powder, and half of the cilantro. Put the cubes on a sheet pan and bake at 350 degrees F for 20 minutes.

  3. Step 3

    Add the pumpkin cubes to the chili pot with salt, pepper, and the remaining chopped cilantro. Enjoy this chili whith some shredded cheddar or parmesan cheese sprinkled over the top of the chili.

Tips & Warnings
  • Use cilantro instead of tortilla chips to cut calories.
