Holiday, birthday or for any occasion; making a carrot cake is nutritiously delicious!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup melted butter
  • 3 eggs
  • 1 cup sugar
  • 2 cup flour
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • 2 cup shredded carrots
  • 1 cup chopped pecans
  • 1 16 oz. can crushed pineapple; do not drain
  • 3/4 cup of raisins
  • Optional-Baking Spray
  • 1 Box of Confectioners Sugar-sifted
  • 1 8oz. package of softened cream cheese
  • 1/2 cup melted butter
  1. Step 1

    Sift together sugar, flour, baking soda and cinnamon in a large bowl. In a separate bowl, mix together the melted butter, vanilla, eggs, raisins, pecans, pineapple and juice. Blend the two mixtures together.

  2. Step 2

    Once all ingredients have been well blended, pour into a greased Bundt pan.
    Bake at 350°F for 45-50 minutes. The crust will be dark because of the cinnamon.

  3. Step 3

    Once cake has baked, cool on a wire rack while still in the bundt. The sides will shrink away to allow easier removal. Once cooled (about 30-45 minutes, flip the cake onto a wire rack to continue cooling. Once completely cooled, drizzle cream cheese icing so that it goes on both sides of the cake. Place on a pretty cake stand or plate.

  4. Step 4

    Making the Cream Cheese Icing
    1) Blend melted butter and softened cream cheese
    2) Slowly add in sifted powdered sugar, mixing between adding the sugar.
    3) Once the ingredients are smoothly blended, drizzle on cake and decorate as desired.
