How to Make Holiday Mashed Potatoes The Night Before

You can make up your mashed potatoes the night before and then just pop them in the oven the next day!

Instructions

Things You'll Need:

  • 13x9 dish
  • 3 lbs potatoes, peeled
  • 1 pkg. (8 oz.) cream cheese
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1/4 cup chopped onion
  • 1 tsp. salt
  • dash of pepper
  1. Step 1

    Slice the potatoes into pieces. Cook the potatoes in boiling water until soft. Drain all of the water off of the potatoes and mash them well with a mixer.

  2. Step 2

    Beat in the cream cheese and the butter until they are melted and mixed well.

  3. Step 3

    Add the sour cream. Mix in well.

  4. Step 4

    Add the milk, the eggs and the onion. Beat all of the ingredients until they are well blended.

  5. Step 5

    Add the salt and the pepper. Mix the ingredients well.

  6. Step 6

    Pour mixture in to the dish. Cover the dish with plastic wrap and refrigerate over night.

  7. Step 7

    The next day, remove the potatoes and bring the casserole dish to room temperature for about an hour before baking.

  8. Step 8

    Bake for 45 mintues at 350 degrees. Enjoy your yummy and easy holiday mashed potatoes!!
