Syllabub, a once a festive drink made from milk and wine or ale gradually evolved into the rich, creamy dessert we know today. It first became popular in Elizabethan times, and by the 18th century, was served at society Christmas parties. The name comes from "Sille" an old French wine, and "bub" meaning a frothy, bubbling drink. Syllabub is an excellent dessert to serve after a heavy Christmas meal, in place of a Christmas pudding. It is also a wonderful addition to Christmas parties.

Instructions

Things You'll Need:

  • 1 lemon
  • 6 tablespoons sweet white wine
  • 1 tablespoon medium sweet sherry
  • 2 tablespoons brandy
  • 2 oz raisins
  • 2-3 oz powdered sugar
  • 1/2 pint double or whipping cream
  • grated nutmeg

    How To Make Syllabub

  1. Step 1

    Pare the rind from the lemon and extract the juice. Place both in a bowl with the wine, sherry, brandy, sugar, and raisins. Leave to soak overnight.

  2. Step 2

    Remove the lemon rind from the bowl. You can discard it or keep to make decorative curls for the finished syllabub.

  3. Step 3

    Add cream to the wine mix and whisk until it stands in soft peaks.

  4. Step 4

    Pour the cream mixture into tall serving glasses and chill. Before serving, dust with freshly grated nutmeg and curls of lemon rind.
