How to Make Diabetic Thumprint Cookies

This article tells you how to make delicious reduced sugar thumbprint cookies.

Instructions
  1. Step 1

    6 tablespoons stick margarine or Smart Balance stick, softened
    1 cup Splenda Sugar Blend for Baking
    1 large egg
    2 tablespoons 1% milk
    1 teaspoon vanilla extract
    1 1/4 cups all-purpose flour
    1/4 teaspoon baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    3/4 cup favorite sugar-free spread able fruit, jelly or jam

  2. Step 2

    Beat margarine or Smart Balance and Splenda until well combined. Mix in egg, milk and vanilla until blended. Gradually beat in combined flour, baking powder, baking soda and salt.

  3. Step 3

    Shape dough by teaspoonfuls into balls. Place on sprayed baking sheets. Press thumb deeply into dough to form a "thumbprint" indentation. Bake in pre heated 350F oven 11 to 13 minutes or until firm to the touch. Remove from baking sheet and cool completely on wire rack. Fill each cookie with about 1/2 teaspoon sugar-free fruit, jelly or jam.

  4. Step 4

    This recipe makes about 2 dozen cookies.

  • Although this is a reduced sugar recipe, always keep in mind diabetic nutrition requirements, restrictions and substitutions.
