I remember growing up as a child and my mother making us Peanut Butter Rice Krispy Treats. That was one of my favorite snacks growing up as a child. Now that I am a father, I can pass down this tradition to my children. There is however a catch. My oldest sun is allergic to peanuts. So instead of using Peanut Butter we replace this ingredient with Soy Butter. We have also substituted Peanut Butter with Sunflower Butter. I actually tend to prefer the Sunflower Butter over both Peanut and Soy Butter as it has a smoother taste. Most people are actually not aware that there even is such a product available. Both Soy and Sunflower Seed Butter offer excellent substitutes for those with food allergies.

Instructions

Things You'll Need:

  • 1 cup Karo Syrup
  • 1 cup Sugar
  • 1 cup Soy Butter or 1 cup Sunflower Seed Butter
  • 5 cups Rice Krispies
  1. Step 1

    Bring the Karo Syrup and Sugar to a slow boil stirring often.

  2. Step 2

    Slowly stir in the Soy Butter, and continue to stir often.

  3. Step 3

    Remove the Karo Syrup, Sugar, Soy Butter mix from the heat and stir in the Rice Krispies.

  4. Step 4

    Pour and spread the mixture into a 9" x 13" pan and let cool.

  5. Step 5

    Once the mixture has cooled, but into small squares and enjoy!

  • You can substitute the Peanut Butter with either Soy Butter or Sunflower Seed Butter.
  • Look for Soy Butter or Sunflower Seed Butter at specialty grocers.
  • You can also find Soy Butter and Sunflower Seed Butter at Walmart and Target.
  • This recipe is egg free, dairy free, and peanut free. If you have any other food allergy, PLEASE BE CAREFUL and check your ingredients.
  • If you have food allergies, ALWAYS read the food labels.
  • Check how and where your ingredients are processed. They may be processed on the same machinery as peanuts which can cause the same damage for people.

on 1/23/2009 This didn't turn out so well for me. It's definitely tasty, with a nice buttery flavor, but the consistency was much too goopy - it had to be scooped out with a spoon. I followed all the directions perfectly, but I think the problem might be that it's not specified how long the syrup should be on a low boil before removing from the heat, and what consistency it should get to first before removing from the heat. My preschool class didn't mind the "goop" consistency, thank goodness, but I would like to get that clarified before I try to make this again :)
